🧁 Brighten up buttercup! 🍓 Our Strawberry Cinnamon Creme Cupcakes are here to bring some cheer. These gluten-free cupcakes are great for anyone at your holiday table and are simple to prepare. We added bright and flavorful Strawberry GlenOaks Probiotic Drinkable Yogurt to the frosting and the batter which adds a silky sweet flavor and also helps tenderize the cupcakes to make them soft and fluffy. Plus, you're getting a complete source of protein, and let's be honest, no one will argue with protein when it comes in the form of a cupcake. Are we right, or what? ☺️🧁

Dry Ingredients:
2 ½ cups gluten-free all-purpose flour
1/2 cup vegan cane sugar or sugar equivalent
3 teaspoons baking powder
3 teaspoons beetroot powder or 3 full drops of natural red food coloring
1/2 tsp. baking soda
Wet Ingredients:
3 cups (360g) fresh strawberries, sliced
1 cup Strawberry GlenOaks Probiotic Drinkable Yogurt
1/3 cup unsweetened strawberry applesauce
2 tbsp. low-fat or regular cream cheese
1 tbsp. lemon juice
1 tsp. pure vanilla extract
1 tsp. cinnamon
For the frosting:
1 cup vegan butter or regular butter
1/4 cup Strawberry GlenOaks Probiotic Drinkable Yogurt
1/2 cup powdered sugar
1/2 cup fresh, sliced strawberries
1/4 cup freeze-dried strawberries, crushed in a food processor
1-2 tsp beetroot powder for coloring
1/2 tsp. cinnamon
Decorations:
2 cups freshly sliced strawberries

Directions:
1. Preheat an oven to 350, F. and spray a 12-cup cupcake pan with non-stick spray or line with cupcake liners. Set aside.
2. In a large bowl, add the dry ingredients, then sift and stir to combine. Set aside.
3. In a food processor add all wet ingredients, and blend just until pureed and the mixture is smooth and creamy. Stir this mixture into the dry ingredients just enough to coat everything.
4. Pour the cupcake mixture into your prepared cupcake pan and bake for 25-30 minutes.
5. Make the frosting; add all the ingredients into your food processor and process until you get a thick frosting.
6. Once the cupcakes are done, remove them from the oven, and let them cool. Enjoy!

2 pitted Medjool dates

Cinnamon Drizzle Topping: Combine 1 tsp. raw cashew butter, 1 tsp. pure maple syrup, pinch of cinnamon, and 1 tbsp. unsweetened applesauce in a small ramekin until blended together.

Directions:
Add all the ingredients to your blender, process on low then bump it up to high and blend until smooth and creamy. Make sure the dates are completely blended, then top with fresh regular frozen blueberries, and the prepared cinnamon drizzle topping. Pour into your favorite glass, add a fun straw, and enjoy!

Ingredients:
2 mandarin oranges
1 cup fresh pineapple cubes
1 cup frozen mango
1 tsp. maca root powder
1 cup Tropical Fruit GlenOaks Probiotic Drinkable Yogurt
1 tsp. matcha green tea powder
1/2 scoop vanilla-flavored protein powder of choice
1/4 cup ice
optional garnishes: raw almond slices, pumpkin seeds, few slices of mandarin orange

Directions:
Add 2 mandarin oranges (peeled) to a blender and then add the fresh pineapple cubes, maca root powder, Tropical Fruit GlenOaks, and frozen mango. Blend until thick and creamy; it should be thick. Add to your favorite glass and set aside.
